Spicy Mutton Chukka at Madurai That Keeps You Licking Your Fingers

Crazy about food and cuisine, I always visit the local restaurants every time I visit a new place. Here I am sure to get authentic dishes of that area made in the traditional style. At Madurai also we visited a restaurant that served a wide range of typical dishes of Madurai, that one is sure not to get anywhere else. It was the evening that we reached Madurai that we decided to have some of the local dishes. One of the dishes that we liked the most was the Spicy Mutton Chukka.

Mutton Chukka Varuval in the Madurai style is spicy and very yummy to taste. You need 1kg boneless mutton, 6 teaspoon coriander powder, 2 teaspoon each of chili powder, sesame oil and cumin powder, ½ teaspoon aniseed powder, 1 teaspoon pepper powder, 5 table spoon sun flower oil, 250 gm onion, salt to taste, turmeric powder and water to make the dish.

First you have to wash mutton well and cut it into pieces. Then cook it with water, turmeric and salt till it is tender. Next you cut the onions into thin round pieces and fry it in the oil till brown in color. You also have to add aniseed and curry leaves to the oil. Then you have to add the mutton with gravy, chili powder, coriander powder and cumin powder and fry it till all the water gets evaporated. The mutton will get a brown color and starts emitting a pleasant aroma. Then add sesame oil and pepper powder and mix well. The spicy dish is ready to eat.
